100% Chardonnay |  Traditional Method | 34 months on lees

Crafted from Chardonnay grown on the cool, north-facing slopes of the Beamsville Bench, this Blanc de Blancs reflects the calcareous soils and precision of our site. Harvested on September 16 and gently pressed, it was wild fermented in stainless steel, neutral barrels, and 500L puncheons, then underwent full malolactic fermentation.

After 8 months on lees, the wine was bottled for secondary fermentation and aged 34 months sur lie. Brut in style (7 g/L RS), with bright acidity and mineral drive (pH 3.15, TA 7.2), this sparkling offers a focused, textural expression of place.

Lemon zest, fresh cream, and green apple lead, with toasted almond and brioche from extended lees aging. The finish is long, linear, and saline.
